FAQs
What makes Hayati’s zaatar different from the rest?
I wanted to create the best green zaatar on the market—and I believe I did. Most green zaatar blends cut corners: they bulk it up with wheat to make it cheaper and fluffier, and use citric acid instead of real sumac for that lemony flavor.
Hayati’s zaatar contains no wheat, just thyme from Palestine. The tanginess comes from real, finely ground sumac—never citric acid. I use sea salt instead of iodized salt, and olive oil instead of canola or seed oils.
Every ingredient was chosen for flavor and quality. We're showing off the beauty of the Arab world, after all.
What's the best way to store zaatar?
Za’atar is best stored in an airtight container in a dark, dry place. Avoid direct sunlight. Basically, keep her in her tin box :)
Will you offer bulk or refill bags in the future?
That’s the goal :)
How long does zaatar last? What does the best by date mean?
You will experience the best of the zaatar within two years of us mixing it. You will see that date on the bottom of the tin. That's not to say that the spice goes bad after two years, it's just best within the two year range!

The amazing Ibrahim Abu Touq. Support his work on Instagram :)
Is your zaatar gluten-free?
Our za’atar recipe does not contain wheat, but it is processed in a facility that handles wheat and may contain trace amounts of wheat. If you have a severe allergy to wheat, we recommend avoiding the za’atar.
Is your zaatar organic?
Our zaatar isn’t certified organic—not because it isn’t grown naturally, but because certification in the Middle East is extremely expensive and often unnecessary. Our farmers in Palestine and Jordan use traditional methods passed down for generations—no pesticides, no chemicals. Organic foods are incredibly necessary in the US because of heavy pesticide use (i.e. glyphosate) in large-scale farming—I get it, all my food made in america is organic, but my zaatar isn't grown that way. I specifically chose this family because I loved their farming practices. And, to ensure it's the highest quality, we lab test every batch.
So while it's not certified organic, it's grown organically—maybe one day we’ll help out our farmers with the certification!
Why is there a Prop 65 warning on the za'atar?
Prop 65 is a California law that requires businesses to warn consumers about potential exposure to over 900 chemicals, including lead, even when present in trace amounts. Prop 65 limits for lead are significantly stricter than federal and international food safety standards—sometimes by a factor of 1,000. Because plants absorb minerals from the soil as they grow, herbs and spices, like many other foods (chocolate, leafy greens, seafood), may naturally contain trace levels of heavy metals.
Our za’atar is tested to meet or exceed FDA and international safety standards, and the presence of naturally occurring trace elements does not mean the product is unsafe. However, since Prop 65 applies only to California, we are required to include this warning:
⚠ WARNING: Consuming this product can expose you to lead, which is known to the State of California to cause birth defects or other reproductive harm. For more information, visit www.P65Warnings.ca.gov/food.
Is your product evaluated by the FDA?
Our za’atar is made with high-quality ingredients and meets FDA food safety regulations, just like any other packaged food. However, the FDA doesn’t review individual products unless they make specific health claims.

Can I recycle my tin?
Please ! Reduce, reuse, recycle. Aluminum is the #1 most recycled material in the world. We chose tin because:
- It can be recycled infinitely without losing its properties,
- It can be reused in your home for other goodies,
- It extends the shelf life of the spice, and
- Of Yasmine’s connection to drinking loose leaf tea her whole life from tin boxes.
We’d love to see how you use the tin box after you’ve finished the za’atar – send us photos to our email hello@hayatigoods.com or tag us on Instagram.
